Everything that I was once familiar with has been rapidly coming back into my life. It's been great to catch up with long lost friends and indulge on the great Eugene restaurants I have missed. The amazing unique Eugene food was one of the things I missed the most while away. Even while tasting the amazing food in South America, I couldn't get the cravings away from me. I swear Eugene has the best Thai food and sushi in all of the United States. Not only do they have amazing ethnic restaurants, but there is also a variety of strange food you can only find in Eugene. I have now been to Off the Waffle seven times since I have moved back this term. Off the Waffle is known for their crazy toppings that are on their buttery waffles. I always get The Goat in Headlights, which is a waffle with two eggs, avocado, and goat cheese. Another favorite of mine is The Banana Split, which has ice cream, bananas, whip cream, and almonds on top of a waffle. Although the combinations may sound strange, I urge you to try it before making judgments. I could travel all around the world, but I am convinced I will not find anything quite as remarkable as Off the Waffle.
Besides indulging in food, I have been spending a lot of time trying to teach myself a lot of the Spanish I never learned. I am currently in three upper division Spanish courses and I realizing how unprepared I really am. This is the first time I have taken a Spanish course in college. Although I can understand and speak Spanish pretty well, it's very difficult for me to read and write it. I also don't know all the tenses that there are in Spanish. Whenever I have free time I try to practice the technical parts of Spanish. If I continue to struggle I will have to start going into my professors' office hours and get some more individual help from them. All my instructors have been very patient and helpful with me and everyone in the class. I think I will learn a lot this term, but it will just take a lot of work and self motivation.
